Marinated Spanish olives Preparation

If you want to give your olives a different flavor, you just need to mix them with some ingredients that you probably have at home most of time.

Mix all the ingredients with the olives in a jar, stir to properly mix it all and let it marinate for 3 or 4 days. They go great with a good wine or wheat beer. 

You can vary with other Spanish olives, such as our stuffed olives with anchovies or garlic, you will get different flavors and textures.

  • 1 can pitted black olives Plaza del Sol

    1 tablespoon sherry vinegar Plaza del Sol
    2 green chilies Plaza del Sol, thinly sliced
    2 garlic cloves, thinly sliced
    2 tablespoons of lemon juice from Murcia Plaza del Sol
    Half-orange juice and zest 
    1 teaspoon of coriander seeds, crushed
    ½ teaspoon of cumin powder
    ½ teaspoon of dried thyme
    ½ teaspoon of dried rosemary
    3 tablespoons extra virgin olive oil Picual and Arbequina Plaza del Sol
