Seafood Paella
Preparation
Heat the olive oil in a paella pan, add the prawns and shrimp with a pinch of salt, and sauté them briefly until golden. Remove from the pan and set aside.
In the same oil, sauté the squid. When almost done, add the tomato, garlic, and paella seasoning. Mix well and add the rice.
Add 1 measure of the Plaza del Sol fish stock can and 3 measures of water. Stir to combine the ingredients and adjust salt if necessary.
Cook over high heat for 10 minutes, then reduce to low heat and cook for another 10 minutes.
Shortly before removing the paella from the heat, add the prawns, mussels, and shrimp to warm them up with the rice.
Let the rice rest for a few minutes before serving.
Serve with bread and aioli.
