Vegetable Paella Preparation

This is a vegetarian and light version of our beloved paella dish. You can add and substitute some of the veggies to taste or maybe for ones in-season in your town.


First we peel and cut all the vegetables. Heat the olive oil in a paella dish and sauté the peppers for a few minutes, add the rest of the vegetables and beans. Sauté and mix thoroughly and add the crushed tomatoes. Sauté for a few more minutes and add 1 liter of water (it could be substituted with vegetable stock), add the rice, paella seasoning and salt to taste. 


Let it simmer for 10 minutes in high heat and 10 more minutes in low heat. Let it sit a few minutes before serving it so it can absorb all the flavors. You can enjoy it with alioli sauce and a good Spanish wine.

  • 1 green pepper

    1 red pepper 
    2 ripe tomatoes (crushed)
    2 artichokes
    1 aubergine (eggplant)
    2 garlic cloves finely cut
    200g of cauliflower
    250g of flat green beans (Helda beans)
    250g Garrofón (giant butter beans)
    400g special Valencian rice for Paella. Variety “Sendra” Plaza del Sol 
    200ml of extra virgin olive oil 
    1 envelope of paella seasoning with saffron Plaza del Sol
    Salt
