Octopus Galician-Style
Preparation
First, cut the potatoes in slices and boil them with a pinch of salt.
Clean the octopus thoroughly. Beat it repeatedly with a mallet and wash it in plenty of water. (To skip this step you can freeze the octopus for a couple of days before cooking it).
In boiling water, add the onion and some salt, then put in the octopus, wait about 10 seconds and take it out, repeat this step 3 times, just to scald it. Place the octopus back on the pot and let it cook until is tender. The cooking time is approximately 30 minutes, but it may vary.
Take it out of the water carefully so the skin does not disintegrate. Cut the octopus with scissors into 2 centimeter pieces. Place the hot octopus on a layer of potatoes on a plate. Sprinkle the salt and paprika and add a pinch of olive oil.
