Lean pork with tomato
Preparation
Finely dice the peppers and onion.
Preheat the olive oil in a deep saucepan, sauté the green peppers and onion over low heat until they’re tender and the onion is transparent. Add salt and pepper to the lean pork and put it in with the vegetables.
Let it cook for a few minutes until the pork is mildly cooked, then add the homemade style tomato sauce and mix everything together, leave it to slowly simmer for 10 minutes. Pour the white wine and let it simmer for another 10 to 15 minutes so the pork can absorb the flavors and becomes very tender.
Serve it in a small deep dish with a couple slices of baguette.
Serves 4 500g of lean pork diced in bite sized pieces
