Minestrone Soup
Preparation
Heat 2 tablespoons of oil in a large saucepan over a medium heat. Add the chopped vegetable and cover with the broth cook until the vegetables have softened, stirring occasionally.
Add the white beans and let them cook for about 2 minutes. Meanwhile poach the egg with plenty of boiling water with vinegar for approximately 3 minutes, Then remove from heat.
Cook the pasta in water, strain and set aside. Serve in a deep dish the beans, the poached egg, the pasta and the grated Parmesan. Enjoiy it!

1 sticks of celery
1 small leek
100g courgette

1l vegetable broth
Parmesan cheese
500 g pasta
3 teaspoons of vinegar
