Rabbit with Rosemary Preparation

Clean well the rabbit, cut into pieces and season. Put oil on to heat in an earthenware dish and cook the rabbit together with the finely chopped onion. Add a glass of white wine and allow to cook.


Mash a clove of garlic, rosemary, thyme and parsley in a mortar with a pestle.


Add a little of vinegar into the casserole dish. Add the chopped tomato and allow to boil. Finally cut the potatoes into slices and put them in half way through cooking.

    2 ripe tomatoes

    4 potatoes
