Tarta de Santiago (St. James’ Cake)
Preparation
This is a very traditional cake from the region of Galicia but very well known throughout Spain, if you’ve been in the city of Santiago de Compostela, surely you’ve seen it in bakeries around the city. Here is a simple recipe of this delicious almond dessert.
Preheat the oven at 170ºC while making the cake.
Beat the eggs and sugar together in a large bowl. Add the almonds, lemon zest and cinnamon, stir until thoroughly mixed.
Use a spring form cake pan previously greased with olive oil and pour the mix, spread it evenly in the cake pan. Bake in oven for 50 minutes until the top layer turns golden, wait for it to cool down before removing from the pan.
To decorate place the paper cut out of the cross of St. James, place it in the middle and sprinkle the powdered sugar over the cake, remove the cross carefully and the cake is ready to be served.
Serves 8 5 eggs
250g of sugar
250g of ground almonds, preferably of the “Marcona” variety
Zest of 1 lemon
1 teaspoon of powder cinnamon
A little extra virgin olive oil
Powdered sugar
A paper cut out of St. James’ Cross.
