Homemade custard
Preparation
Put the milk and the cinnamon stick into a large pan and gently bring to just below boiling point. Strain the milk to remove the rest of the cream that could remain and reserve.
Meanwhile, in a large bowl whisk the yolks, cornflour and sugar gradually pour the hot milk mixture onto the sugar mixture whisking constantly.
In a separate deep saucepan pour the mixture back into it. Heat gently stirring with a wooden spoon until the custard is thickened before any lumps form. Eat hot or cold
If you wish you can also sprinkle the custard with ground cinnamon
