Dressed potatoes
Preparation
Cook the whole potatoes unpeeled with water and salt for twenty minutes, pricking them from time to time to check if they are soft. Then peel and cut them into rounds.
Dress them while hot with chopped spring onion, salt ,parsley, oil, and vinegar. Allow them to cool and serve.
Serves 4 1kg of potatoes
