Chicken Paella
Preparation
Heat a good amount of oilve oil to fry the chicken in a pan, then add the chicken cut up into pieces with a pinch of salt, fry it in medium heat and moments before it’s ready remove it and set It aside for later. Use the same oil and place the whole garlic head (unpeeled), thesliced red pepper and the peeled garlic clove. Carefully fry all these ingredients for about 8 minutes and make sure not they don´t get burned, first remove the garlic clove after only two minutes and fry the rest for about 6 more minutes. Remove the garlic and pepper from heat and save the oil as you will use later it with the rice.
Mix well the fried garlic clove and 2 safrron envelopes in a mortar. Also, preheat 4 cups of chicken broth and save for later.
Heat a paella dish adding a generous amount of new olive oil in high heat and add your rice, fry the rice for a minute constantly stirring it and making sure it doen´t get burned, immediatley add the preheated chicken broth, paella seasoning, two spoonfuls of homemade style tomato sauce, the previously used oil and the mix of garlic and saffron. Then place the garlic head in the middle of the pan, add the chicken, red pepper, butter beans and chickpeas and spread them evenly on the pan and add salt to taste if necessary. Let it cook for 10 minutes in high heat and another 10 minutes in medium heat. Add a little more broth if it boils too quickly during these 20 minutes and remove the paella dish from heat after this time has passed.
You must let it sit for a few minutes before serving and keep it covered with a clean kitchen towel. You can enjoy it along with alioli and bread as a side dish and wine.

1 head of garlic (whole) and 1 peeled clove
100g of drained and washed chickpeas Plaza del Sol
100g of drained and washed butter beans Plaza del Sol
1 red pepper
500g special rice for Paella. Variety “Sendra” Plaza del Sol
Extra virgin olive oil Picual and Arbequina Plaza del Sol
2 tablespoons of homemade style tomato sauce Plaza del Sol
1 envelope of Paella seasoning with saffron Plaza del Sol
2 envelopes of saffron powder Plaza del Sol
1l of chicken broth
