Buñuelos de viento Preparation

In a pan on the heat put the water, milk, a pinch of salt and butter.


When it begins to boil, add the flour in one go. Work strongly with a spatula or a wooden spoon until you get a mixture which comes away from the pan.


Remove from the heat and add the lemon zest and the eggs one by one mixing well. Heat with plenty of oil in a frying pan and form small balls with the help of 2 teaspoons.


Fry them in oil that is not too hot until they are golden and have expanded. Remove from heat and place in paper towels to absorb the oil fill them according to your taste.


You can do this with bakers' custard, chocolate cream, candied pumpkin etc. Dust with icing sugar.

    1/4 cup of water

    1/4 cup of milk

    25g of butter

    2 eggs

    1/2 cup of oil

    3 spoonfuls of icing sugar
